The apple is the characteristic fruit of Asturias. The climate and the conditions edafológicas of the different areas of the Principality have propitiated the existence of more than 500 apple varieties, dedicated, in 90 percent, to the production of cider. Its common characteristics are the balance of their acidity and sweetness and the wealth in tannins.
The nascent Denomination of Origin of Cider of Asturias (“Denominacion de Origen de la Sidra de Asturias) has selected 22 of these varieties like the suitable ones for the production of the fermented drink.
